Spinach & Arugula Stir-fry with Cashews

Cook Time:  8 minutes
Yield: 2-4 servings (about 2 cups)


2 tablespoons olive oil
1/2 yellow onion, thinly sliced
8 ounces sliced mushrooms
1 tablespoon soy sauce
4 cups baby arugula & spinach, roughly chopped
1/4 cup grated carrots
1/2 cup cashews
1/2 teaspoon sesame oil


  1. Heat olive oil in sauté pan over medium heat.  Add onions and mushrooms.  Cook for 5 minutes.
  2. Add soy sauce, arugula and spinach.  Cook for another 2 minutes.
  3. Stir in grated carrots, cashews and sesame oil.  Cook for 1 minute more.  Remove from heat and serve.
